Lake perch: are they biting?

Why is perch so popular with the Swiss? Since the 1950s, perch fillets have become a staple dish in lakeside restaurants. The country's fishermen make considerable efforts to satisfy a demand that far exceeds them: it is estimated that they catch less than 10% of the fish consumed in the country.
