What exactly is plant-based meat?

Vegetable meat is on a roll. Two start-ups, including one based in Zurich, raised several tens of millions to produce plant-based protein foods last month. For its part, the Swiss government has announced that farms producing legumes, which often serve as the basis for these products, will receive CHF 1,000 per hectare per year for this type of cultivation. But what does plant-based meat actually contain?
